Squirrel Tacos

It was a cold November morning, I was sitting in my favorite tree stand. The wind was perfect I knew that it was going to be a good day.

Over the ridge I could hear it coming, the unmistakable rustle of leaves of deer. I ready my bow and wait. From behind a hickory tree out steps a huge…. SQUIRREL!

Those stupid little red and gray monsters did it again. I sure that it was a deer this time – getting my hopes up for nothing.

Well I’ll show them. And by show them I mean turn them into tacos.

Everyone loves tacos; they are delicious and easy to make. Small game really lends itself well to tacos or any other dish that you shred the meat.

So sit back and I’ll show you how to turn those little tree stand terrorists in delicious tacos.

Shredded Squirrel

3-4 Gray Squirrels 2-3 Fox Squirrels

2 cups of broth (I use Chicken but beef or any wild game broth would work)

Salt (to Taste)

Black Pepper (to Taste)

2 TBS Chili Powder

1 TBS Cumin

2 TSP Garlic Powder

2 TSP Red Pepper Flakes or Chipotle Pepper flakes

Cheese

Salsa

Sour Cream

Start with browning your meat in a hot skillet, place the browned squirrels in a pressure cooker or Dutch oven, and cover with the broth.

For Pressure cooker cook on high pressure for 15 min, for Dutch oven simmer on the stove top for up to 2 hours or whenever the squirrel is tender.

Remove the meat from the liquid and set the liquid aside. Let the meat cool. Using your hands pull the meat from the bone.

Place the deboned meat in a hot skillet cook it for about 5 min to give it a little char, add one cup of the broth you set aside.

Add the spices and simmer for 5 more min.

Now you are ready build you Tacos. Get your favorite cheese, salsa and shell, either soft or hard both are great. Pile on the toppings and enjoy.
